Gisbelle employs a triple pot still distillation process, adding an extra distillation compared to the traditional double pot still, significantly reducing impurities and preserving the malt's aroma. This results in whiskies that are structurally rich, with pure and fresh layers. Collaborating closely with research institutions, Gisbelle independently developed a specialized whisky yeast that is high in esters, alcohol-resistant, and ferments rapidly. Leveraging the advantages of craft beer production, they innovatively use dual yeast for whisky fermentation, ensuring the complexity of flavors.
Since its establishment in 2011, Gisbelle Winery Company has not only focused on developing apple brandy but also delved into the realm of whisky. In 2013, Gisbelle Whisky Limited was founded, equipped with 60 large malt fermentation tanks totaling 20 tons and six sets of all-copper pot still distillation vessels. The original whisky fermentation process spans a minimum of 128 hours, exceeding the typical 48-hour duration, resulting in an annual distillation capacity of up to 2 million liters of whisky. In 2015, the company independently developed the "Diao Castle Oak Barrel" (Patent Number: 202221375131.4). They innovatively utilize domestically produced Mongolian oak to create the Oriental Diao Castle Mongolian Oak Barrel. Additionally, there are three other types of oak barrels: Oriental Diao Castle Sherry Barrel, Oriental Diao Castle Belle Barrel, and Oriental Diao Castle Winter Bear Barrel. This marks the first time that whisky has been classified based on fragrance, resulting in a unique product matrix featuring four distinct series representing Oriental characteristics: "Oriental Tea Fragrance," "Oriental Sandalwood Fragrance," "Oriental Peat Fragrance," and "Oriental Fruit Fragrance."
Gisbelle Brewing Co., Ltd. is the first in China to utilize craft beer production equipment and processes for unique advantages in distilling whisky. This approach seamlessly integrates the craft beer and whisky processes, departing from traditional single whisky production methods like Scotch and Irish whisky. The craft beer production line includes 46 fermentation tanks of 3 tons and 66 fermentation tanks of 5 tons. Additionally, there are 60 fermentation tanks of 20 tons and 6 fermentation tanks of 60 tons. In June 2014, the company invested nearly 160 million yuan to establish the second phase of the Gisbelle Craft Beer project, with an annual capacity of 50,000 tons, catering to various personalized custom demands. The complex techniques and technology involved in craft beer production provide a solid foundation for Gisbelle whisky distillation and maturation. This has given rise to an industrial tourism project centered around the "Gisbelle Craft Beer" culture, incorporating research and development, production, experiences, dining, shopping, entertainment, and more.
